The roof of the winery building is black because a certain type of black coloured fungus feeds from the alcohol vapours evaporation and thus thrives on the roof of the winery - just like the roofs on cognac houses are black, whereas the adjacent out house roof is not black because there is no alcohol evaporation in that building.
